                                      LIGHT APPLE RICCOTA  BREAKFAST TART


2 eggs, seperate

1 cup Riccota cheese                                                                         

2 tablespoons sugar

3 tablespoons cornstarch                                                                         

1 teaspoons vanilla                                                                           

2 tablespoons  flour

2 apples , peeled off the skin and cut in 1/8 pc.


Mix together Riccota, yolks, sugar and vanilla. Add flour and corn starch. 

In separate bawl beat the egg whites and mix it gently to the flour mixture.

Pour dough in 9 inch pan and orange apple pieces on top. You can also orange apple pieces in the pan first and than pour dough over. Either way taste very good.

Bake  in pre-heated oven to 375 F for 45 minutes.

Serve warm or cold.

                                      STRAWBERRY TART

This tart is very, very good, All the time when I make it , people want this recipe.

I used  strawberries, blueberries and kiwis, but you can use \ strawberries only.

1 1/4  cup flour

7  tablespoons butter, cold

2 yolks

1/4 cup  sugar

1/2 teaspoon vanilla  extract

also 1/2  cup peach jelly

Mix butter, flour and sugar until crumbly. Add the rest of ingredients and  put to refrigerator for 1 hour.

Than roll out dough to 10 inch tart pan.

Bake in pre-heated oven to 375F for 15 minutes. Cool, spread over peach jelly.

On top spread cream { recipe below} and  put over cut strawberries.


Cream recipe:

1 3/4 cup milk

2 eggs

1 teaspoon vanilla extract

1/2 cup potato or corn starch

1/2 cup sugar

1 1/4 cup milk  put to boil. Rest of t he  milk and all the other ingredients. Mix well. while cooking.

When milk start to boil, add  the mixed ingredients and slowly add to it  mixing  well.

Spread warm cream over jelly.

                                       CHOCOLATE SANDWICH COOKIES WITH NUTELLA 

                                                                 OR CREAM

This cookies are called in Polish MARKIZY. They are chocolate sandwich cookies with nutella  they taste heavenly. My family love them.


1 1/2 cup unbleached flour

1/2 teaspoon baking powder

3 tablespoons cocoa                                                                            


3 tablespoons almond meal or flour

1 stick butter, soft

1/3 cup sugar

1 large egg


Mix butter with sugar until fluffy.. Add egg  and mix in quickly.

In separate bowl sift flour, baking powder and cocoa, add almond meal and mix into butter, egg mixture.

Cut with cookie cutters as desire.

Bake for 10-12 minutes in pre-heated oven to 375F.

If the dough is to dry add 1-2 tablespoons milk.

                                       THE  BEST POUND CAKE EVER!!

This is the best  pound cake ever. I tried many pound cake recipes but this is the best.

My grandson  loves it.


1 stick butter or margarine

2 1/2 cup  sugar                                                                       

5 large eggs

1 teaspoon vanilla extract

1 cup milk

1/2 cup oil { canola }

lemon or almond extract  a few drops

3 cups flour

1 teaspoon  baking powder


Mix butter and sugar  until fluffy. Add eggs, 1 at the time and  slowly alternate flour with baking powder with milk. Make ready 2  4x 8 inch bread pans. Bake  in pre-heat to 350 F oven  for 60 minutes or until until wooden stick comes out clean.

                                        SPANAKOPITA

    Spanakopita is a Greek spinach and cheese pie with phillo  dough.

   Delicious  pie, my family love it. I make with 3 kind of cheeses.


2 bags frozen spinach, thawed

2 large eggs ( I used 12 quail eggs)

2 cloves of garlic

2 cups Ricotta cheese

1 cup Monterey Jack or Pepper Jack cheese, shredded 

1 cup Feta cheese

1 onion, chopped

2 tablespoons chopped dill

2 tablespoons chopped parsley

pepper to taste

1 stick butter, melted or 1/2 cup olive oil

Phyllo dough sheets


Fry onion on oil. Drain spinach and squeeze out water.

Mix the spinach, eggs, butter, herbs and all 3 cheeses .

Spray with oil 9 x 13 casserole dish. Spread  half of the spinach mixture .

Cover with a few phyllo dough sheets, brushing each sheet with butter.

I used 6 sheets.

Spread rest of the spinach mixture on top of the phyllo dough  sheets.

Cover with phyllo dough sheets again and brush with butter.

Bake  45 -55 minutes in 350 F.

Cut into squares. Enjoy!!!

                 CHICKEN WITH ARTICHOKE SAUCE AND SPINICH


2 chicken breast { cut in half horizontal}

1/4 cup flour

salt, pepper

2garlic cloves, chopped

1 cup chicken stock

1 cup coconut milk

1 tablespoon mustard

1 can artichoke hearts in water, drained


2 cups baby spinach

Season chicken  with salt and pepper, than pet in flour and fry on both size until lightly brown.

Set aside. Add the garlic to the skillet and cook 1 minute. Add stock, let it boiled, add coconut milk and mustard. Mix well and cook 3 minutes until the sauce reduce. Season with salt and pepper.

Return chicken cutlets to the sauce and cook for 5 minutes more.

Add artichoke, let it heat up, than add spinach and cook a minute more, until spinach wilted.

Serve with coconut rice and some vegetables. I served with brussels 

sprouts.

                                 GLUTEN FREE CHOCOLATE CHIP COOKIES

This cookies are melting in your mouth. My family loves them. My daughter has gluten allergies.

So I bake them often.


4 tablespoons soft butter

1/4 cup light brown sugar

1 egg                                                                                                     

1 1/4 cup almond flour or almond meal

1/4 cup mini chocolate chips 

1/2 teaspoon each baking powder and soda

1 teaspoon vanilla extract

Mix butter and brown sugar until fluffy. Add  egg, vanilla extract , almond flour and baking soda, baking powder. Make 18 cookies.

Bake in 350 F for 15 minutes.

                     CARROT CAKE PANCAKES

1 1/2 cup flour

2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon, nutmeg, cloves

1/2 teaspoon vanilla extract

1/8 cup sugar

2 eggs 

1 1/4 cup buttermilk

1/4 cup milk

2 tablespoons butter, melted

1 cup carrot, shreded

1/4 cup raisins 

Mix dry ingredients. In separate bowl mix eggs, vanilla, buttermilk, milk and butter.

Pour wet ingredients to flour mixture. Add raisins and carrot. Make pancakes.
