BUNDT CAKE WITH GREEN TOMATOES WITH MAPLE ICING
This cake is so good that melts in your mouth. My family love it!! The green tomatoes taste amazing,
makes this cake moist, just delicious! Worth to try.
2 1/4 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup sugar
1/2 cup brown sugar
3 large eggs
12 tablespoons butter. soft { 1 1/2 stick butter}
1/2 cup white raisins { or dark}
21/2-3 cups chopped green tomatoes {3 big tomatoes}
A few drops vanilla oil or 1 teaspoon vanilla extract
Beat butter and sugars until fluffy. Add eggs, one at the time {I put 24 quail eggs} and vanilla.
In separate bowl mix flour, baking powder, salt and raisins. Add flour mixture to butter mixture.
Mix gently and mix in chopped green tomatoes.
Bake in greased bundt cake pan in pre-heated oven 375 F for 20 minutes, than lower the heat to 350 F for 30 minutes or until dry toothpick..
MAPLE ICING:
2 tablespoons butter
1/4 cup brown sugar
2 tablespoons maple syrup
1/8 cup milk
Put all to pan and simmer until ticker. Pour over cake or put over piece of cake on the plate.
