      CHRISTMAS 2020







                        GINGERBREAD WAFFLES

 1 cup flour

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ginger and cinnamon

1/8 teaspoon cloves

3 tablespoon dark sugar

1 large egg, slightly bitten

3/4 cup buttermilk

1/4 cup milk

3 tablespoons melted butter

1/4 cup molasses


Mix all dry ingredients, add egg, buttermilk, butter, molasses and milk.

Pour in hot waffle iron.

Serve with cranberry jelly and whipped
cream as desired.

 CHRISTMAS 2020.





                         SNICKERDOODLE COOKIES   

11/2 cup flour

1/4 teaspoon baking soda

1/4 teaspoon cream of tartar

1 large egg

1/2 cup sugar 

1/2 teaspoon vanilla extract 

1/2 cup butter

2 teaspoons sugar

1 teaspoon cinnamon

Beat butter  and sugar until fluffy.

Add half of the flour, egg, soda vanilla extract and cream fo tartar.

Add rest of the flour.

Chill for 1 hour .

Mix sugar and cinnamon.

Shape dough into 1-inch balls. Roll balls in sugar-cinnamon mixture.

Place 2 inches a part on an ungreased  cookie sheet . Bake 10-12 minutes in 375 F.

                                          EGGNOG BREAD

This  eggnog bread is soooo good, that can hardly last couple hours. I bake this eggnog bread every year around Christmas. Worth to bake!!

2 large eggs

1/2 cup sugar {can put 1 cup, if you like sweet}

3/4 cup eggnog

1/2 cup canola oil

1/2 teaspoon rum extract

1 1/2 cup flour

2 teaspoons baking powder

1/4 teaspoon nutmeg and cinnamon

Eggnog glaze:

3-4 tablespoons eggnog

1 cup powdered sugar

pinch  of cinnamon

Beat eggs with sugar till foamy. Add eggnog, oil, rum extract to eggs mixture.

In separate bowl mix flour, cinnamon, nutmeg and baking powder. 

Slowly add dry ingredients to eggs mixture.

Bake in 350 F for 1 hour. Pan 8 1/2 x 4 1/2 inch.

Mix glaze ingredients and glaze cool bread.

I did not glazed this bread, kids couldn't wait to eat it.

                   12  DAYS OF COOKIES!!

Those cookies are my husbands favorite. He always  fisish them all.

JAM THUMBPRINTS COOKIERS

10 tablespoons butter


1/4 cup sugar                                                                          

1 1/2 cup flour

2 yolks

1teaspoon vanilla

Separate:

2 egg whites, slightly beaten

1 cup walnuts, grind in food processor

Mix butter with sugar, add yolks and  vanilla,

Add slowly flour. Mix well.

Take little piece 1 inch. roll like a little nut and squeeze with thumb on the middle.

Soak in egg white and  roll in walnut.

Bake ok. 20 minuts 375 F.

                                 FRESH CUCUMBER CREAMY SOUP

I got this recipe from one lady in England. We were invited for dinner and this soup was served.

Was just delicious. I never thought that I can make soup from fresh cucumbers.

Worth to try.

Ingredients:

3 cucumbers

1 onion

2 tablespoons butter

First saute onion with butter. Add skinned chopped cucumbers and saute more 10 minutes.

3 tablespoons flour add to cucumbers and stir until smooth paste.

3 cups chicken broth add to cucumber paste stirring constantly, same like making roux.

Add 1 cup milk or heavy cream.

Sprinkle with salt and pepper.

Cool for 15 minutes than blend in blender or food processor.

Serve with croutons and garnish with chives.

                          CHICKEN KIWI - DELISH CHICKEN DISH

Such a good recipe. One of my family favorites. The kiwi fruits give a great flavor.

It is different, it is delicious. I cook also with kiwi berry, I have in my backyard.



2 chickens breast cut into strips                          1 teaspoon hot sauce

1 onion, chopped                                                1 tablespoon soy sauce

2 julienned carrots                                              grated lemon rind

1 cup sliced mushrooms                                    salt and pepper

1 cup diagonally sliced celery                          3 kiwi fruits, peeled and sliced

2 cups chicken broth

1 tablespoon cornstarch

Brown chicken on oil. Remove from skillet and set aside.

Add little more oil, saute vegetables until tender.

Return chicken to skillet. Combine chicken broth and rest of the ingredients except kiwi.

Add to chicken and cook stirring constantly, until mixture is thickened.

Add slicd kiwi and stir gently.

Serve over rice ( rosemary rice , my recipe).

                                       THE BEST POUND CAKE EVER

THIS POUND  CAKE is the best I ever eat. I got this recipe from one cookbook and I love it.

I tried many kinds of pound cakes before, with only butter, with cream cheese and they were good, but this one is THE BEST!! Melting in your mouth.
 

3 cups unbleached flour

2 teaspoons baking powder

2 1/2 cups sugar

1 stick butter, soft

1/2 cup oil

5 large eggs

1 cup milk

Mix butter and sugar until fluffy, add oil and vanilla.  Than add eggs , one at the time/

In separate bowl mix flour and baking powder. Alternating add  flour and milk to the butter mixture.

Prepare two 4x9 inch bread pans and bake  for 1 hour in pre-heated oven to 350 F.

                                     BUNDT CAKE WITH GREEN TOMATOES WITH MAPLE ICING

This cake is so good that melts in your mouth. My family love it!! The green tomatoes taste amazing,

makes this cake moist, just delicious! Worth to try.


2 1/4 cup flour

2 teaspoons baking powder


1/4 teaspoon salt

1/2 cup sugar

1/2 cup brown sugar

3 large eggs

12 tablespoons butter. soft { 1 1/2 stick butter}

1/2 cup white raisins { or dark}

21/2-3 cups chopped green tomatoes {3  big tomatoes}

A few drops vanilla oil or 1 teaspoon vanilla extract


Beat  butter and sugars until fluffy. Add eggs, one at the time {I put 24 quail eggs} and vanilla.

In separate bowl mix flour, baking powder, salt and raisins. Add flour mixture to butter mixture.

Mix gently and mix in chopped green tomatoes.

Bake in greased bundt cake pan in pre-heated oven 375 F for 20 minutes, than lower the heat to 350 F for 30 minutes or until dry toothpick..


MAPLE ICING:

2 tablespoons butter

1/4 cup brown sugar

2 tablespoons maple syrup

1/8 cup milk



Put all to pan and simmer until ticker.  Pour over cake or put over piece of cake on the plate.

CHURRO PANCAKES

 1 1/2 cup flour

2 teaspoons baking powder

2 large eggs

2 tablespoons brown sugar                                                         


1/2 cup sour cream

3/4 cup milk

1/2 teaspoon cinnamon

1 teaspoon vanilla extract

  • Beat eggs, sugar and vanilla until fluffy. 
  • Add sour cream, milk and dry ingredients.
  • Cook pancakes as usual
  • Mix 2 tablespoons sugar with 1 teaspoon cinnamon on separate plate, so when you take out cooked, warm  pancakes out from pan , put them straight to cinnamon sugar on both sides.

ZUCCHINI CHOCOLATE BREAD

This is very good , quick chocolate  with zucchini bread. My kids called this for sometimes zucchini brownies, especially when i baked in 8x13 inch pan.


 2 1/4 cup flour

2 teaspoons baking powder

2 cups shredded zucchini

1 cup milk

1 cup oil                                                                           




3/4 cup cocoa

3 eggs

1 teaspoon vanilla

1/2 cup mini chocolate chips

pinch of salt

1 cup sugar ( I put less}

Beat eggs, sugar and vanilla until fluffy.

Add oil and zucchini. Mix flour, baking powder, cocoa, salt and chocolate chips.

Altenating mix flour mixture and  milk into eggs mixture.

Use two  4x9 inch pan for bread @ 350 F for 1 hour,

SUMMER SALAD!!

I made this salad this year for 4th of JULY party. It was very good. I just want to use watermelon, because we got 16 of them.But I think the secret of this salad was the very ripped tomatoes.

2 tomatoes, chopped
1 mango, peel of skin and chopped
1 can sweet corn,drained
3 slices watermelon, chopped in squares
Mix all and add dressing

DRESSING:
2 tablespoon each: apple cider vinegar or champagne vinegar
                               olive oil
                               lemon juice

salt, pepper, pinch of sugar

DELICIOUS COCONUT CAKE

This cake is soooo good, that everybody in my house devour it all the time. Especially when is fresh, baked the same day.


2 cups flour
1 teaspoon baking soda
1 cup butter, room temp.
1 teaspoon vanilla extract
1 1/2 cup sugar
1 cup buttermilk
1 1/2 cup coconut
5 eggs, separated
1 cup chopped walnuts

Mix butter and sugar until fluffy. Add yolks and vanilla.
Beat egg whites until firm. Sift flour and baking soda.
Add flour alternating with buttermilk to butter mixture and walnuts.
Than add coconut and fold in egg whites. Grease two 9 inch baking pan.
Bake 1 hour in 350F (175C).

Cream:
1 cup heavy cream
4 oz cream cheese, room temp.
1/4 cup powder sugar
1/2 teaspoon gelatin
Beat heavy cream until firm, add sugar and cream cheese 1 tablespoon at the time.
Gelatin dissolve in 1 teaspoon hot water and add to cream.

PUMPKIN & CHOCOLATE BUNDT CAKE

This is my favorite cake with pumpkin, not mentioning the chocolate. Chocolate makes everything better. Worth to try. It is delicious!! 




3/4 cup butter, soft
1/2 cup brown sugar
1 cup sugar
2 large eggs
1 teaspoon vanilla
2 1/2 cup unbleached flour
1 teaspoon each baking soda, baking powder.
1 teaspoon cinnamon
1 lbs pumpkin, mashed
1 cup chocolate chips
1 oz baking chocolate, melt and cool
1/2 cup pecans, chopped(optional)

Cream butter, sugars and vanilla extract until fluffy. Add eggs, one at the time. Sift dry ingredients and slowly add to butter alternately with pumpkin. Add chocolate chips. Divide dough in 2 parts. To one part Add chocolate and mix well.
Grease bundt cake pan and sprinkle with flour and pecans on the bottom of the pan.
Pour half of the chocolate dough, than pour the other half of the dough and sprinkle with pecans.
Bake for 1 hour in 350 F.

PINEAPPLE DELIGHT

This casserole is serve in my house around Easter for dinner with ham. Everybody love it!!



2 cans (14oz each)chunk pineapple
6 tablespoons flour
3/4 cup sugar (can put less)
2 cups grated sharp Cheddar cheese
crackers
6 tablespoons butter

Stir together the flour , sugar and drained pineapple. Add grated cheese. Put this mixture into casserole dish and crumble crackers over the top. Melt the  butter and drizzle over the crumble.
Bake in 375 F for 35-45 minutes.
Very good serve with chicken or ham.

STRAWBERRY AND OTHER FRUITS TART

This is my favorite fruit tart. Easy to make and delicious.


1 1/4 cup unbleached flour
7 tablespoons butter
2 yolks from large eggs
1/4 cup  sugar
1/2 teaspoon vanilla extract
a few tablespoons black currants jelly

Mix in food processor flour, butter, sugar and vanilla. Add yolks.
Take out dough and cool in fridge for an hour.
Take out dough roll out and put to tart pan. Poke with fork and bake for 20 minutes in 350 F pre-heated oven. Cool and spread jelly on the bottom than warm cream ( recipe below) and fruits.
I put strawberries, blueberries and kiwi.


Cream recipe:
1 3/4 cup milk
1/2 cup milk
2 large eggs
1/2 cup corn or potato starch
1 teaspoon vanilla extract

Mix together eggs, starch,vanilla extract and sugar.
Boiled milk add to egg mixture, all the time mixing.
Pour back to a milk dish and cook 3 minutes until solid.

REUBEN CHICKEN

This is delicious. I serve this dish always around  St. Patrick's day, but not only. My family love it.you 
Cheese I put on top sometimes for the last 15 minutes 

2 large chicken breasts
16 oz sauerkraut
8 oz Swiss cheese, sliced
1 16 oz  Thousand Island  dressing


Place chicken breasts on glass casserole.
Orange sauerkraut on top of the chicken breasts.
Put on top slices of Swiss cheese and  pour over dressing.
Bake on 375 F for 1 hour and 15 minutes.

Mom's Spiced Cake

1 1/4  cup brown sugar
1 cup sugar
3/4 cup butter,soft
3 large eggs, beaten with buttermilk.
2 3/4 cup unbleached flour
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg, cloves
1 1/2 cup buttermilk

Cream together sugars and butter until fluffy.Beat in the eggs, one at the time.
Sift the dry ingredients and stir in alternately with buttermilk. Bake in 350 F for 45-55 minutes in 13x9 greased and floured pan or 2 round 9 inch pans.Let cool and make brown sugar frosting.

Brown Sugar Frosting:

1 cup brown sugar
 12 tablespoons half-and-half or heavy cream
1 teaspoon vanilla
4 tablespoon butter

Combine sugar and cream and boil for a few minutes. Remove from heat and add butter and vanilla.
Beat mixture until no more glossy. If too stiff, add more cream.

KOLACZKI #1

I have a few recipes for kolaczki, that's why I marked this as a #1. This one is my favorite and easy to make.

1 ( 8 oz.) cream cheese
1 cup butter
1 yolk ( from large egg)
1 1/2 cup unbleached flour
1 teaspoon baking powder
1 tablespoon sugar
1 jar raspberry or apricot jelly or maraschino cherry

Mix dry ingredients. Cut butter and cheese  with the flour. Add yolk and  make a dough.
Roll out the dough to 1/4 inch thick. Than cut 1.5 inch stripes and than 2 inch pieces across.
Fill up each piece with jelly and  pinch  the two endings together.Bake 20 minutes in 350 F.

Oatmeal Waffles GLUTEN FREE

This waffles are so good, that the first time I made them, my family devoured them all.



2 cups oatmeal ( blend them in food processor)
1 teaspoon cinnamon
1 teaspoon baking powder
pinch of salt
2 tablespoons coconut oil, melted
2 tablespoons maple syrup
2 cups milk (300 ml)
1 large egg
1 teaspoon vanilla
1/2 cup raisins

Mix dry ingredients. Beat egg and mix with milk.Add rest ingredients.
Leave for 15 minutes until the dough get ticker. Add raisins.
Bake  in a waffle iron until done.


DUCKIES IN MY POND


ORANGE ALMOND CROISSANTS/ COOKIES

These are so good. They melt in your mouth. If you take one , you going to reach for second and third. The dough is little tricky to handle, but you can do it. It is worth it.


1 2/3 cup unbleached flour
1 tablespoon powder sugar
1 teaspoon vanilla
1 cup almond meal or almond flour
14 tablespoons butter
shredded skin from half orange

Mix flour and a butter in food processor. Add the rest of ingredients and pulls until become solid dough. Take it out and knead on the floured board for a  couple minutes. Put to fridge for half an hour. Take it out , pull small piece and roll  to 3-4 inches long. Than bend lthe  dough like a croissant.
The dough is little hard to handle, but try to work it out.
Bake 15-18 minutes in 375 F.

IRIS SCONES

These are so good that my daughter , who hates raisins eats them. She requests them often. I like them any time with cup of coffee.



2 cups all purpose flour
2  1/2  teaspoons  baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
2 eggs
6 tablespoons butter, melted
1/2 cup buttermilk
1/2 cup dried currants or raisins

Pre-heat oven to 400 F. Mix all dry ingredients together.
In separated bowl beat eggs, add butter and buttermilk.
Add  dry ingredients to egg mixture. Mix in dried currants. Divide dough to three parts.
Roll three circles about 1 inch thick, than cut to quarters. Transfer wedges to baking pan and bake for 15 minutes or until ready. You can put over top of scones beaten egg to look nice and shiny.
Enjoy!! There are sooo good.

SALISBURY STEAK

My family likes this recipe. I've been making this dish for years. Each time come little different.
Each time I add something extra on top, like green onion , mushrooms or dill. Served with mashed potatoes and pickle on the side, is one of the comforting dishes.



1 1/2 lbs ground beef (90/10)
1 (10oz) cream of mushroom soup
1/2 cup bread crumbs , seasoned or crackers crumbs
1 tablespoon Worcestershire sauce
1 egg, beaten
1 onion, chopped
1/3 cup water or milk
salt and pepper
1 cup sliced mushrooms
2 tablespoon butter


Combine ground beef with 1/4 cup cream of mushroom soup. Add  onion, egg, bread crumbs, salt, pepper and Worcestershire sauce. Mix well. Shape 6 patties , orange them in 9x13 casserole dish.
Bake uncovered for 30 minutes in 375 F pre-heated oven. Skim off fat.
In small bowl mix left cream of mushroom soup with water or milk. Spoon over patties.
Bake additional 15 minutes.
Fry the sliced mushrooms with butter and serve on top of patties with sauce.

HAZELNUT BUNDT CAKE / BABKA

This is very good cake. You can really get the taste of hazelnuts. One of my favorites for EASTER.


1/2  cup butter
1/2 cup Nutella/hazelnut spread
1 cup sugar
1 cup hazelnut meal or hazelnuts cut in food processor
3/4 cup unbleached flour
3 teaspoons baking powder
5 large eggs separated
1 tablespoon cocoa or instant coffee
4 tablespoons milk
1 teaspoon vanilla extract


Cream butter and sugar until fluffy. Add  Nutella and mix well. Add 5 yolks, one at the time.
In other bowl mix flour, baking powder, cocoa and hazelnuts.
Mix dry ingredients, milk and vanilla to butter mixture.
Beat egg whites until stiff and slowly add to batter.
Bake  50 minutes in pre-heated oven to 350 F.


Put on top chocolate glaze.

COLESLAW

This is very good recipe. The dressing is really good. even better , if marinated for a few hours.


1/2 head of cabbage, shredded
1/2 onion, shredded
1 carrot shredded
1 stick of celery, shredded

For the dressing:
1/2 cup buttermilk
1 tablespoon apple cider vinegar
1 teaspoon sugar
1 teaspoon mustard
1/4 cup mayonnaise 
salt, pepper 

Mix all ingredients for the dressing and put over vegetables.
Let it marinated for a few hours before serving.
