Applesauce Bread

3 cups flour
1/4 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon cinnamon
3 eggs
1 1/2 cup sugar
2 cups applesauce
1/2 cup buttermilk or plain yogurt
1/4 cup raisins and chopped apple

Mix firs 4 dry ingredients ,set aside.Beat 3 eggs with sugar.Add oil, applesauce and buttermilk, while alternating with small amounts of the flour mixture until everything is smooth. Bake  75 minutes350 F in preheated oven.Make 2 loafs.

Hearty Beef Stew

A hearty beef stew for the cold winter days seems like a good meal.
.1 pound beef stew meat
2 tablespoons olive oil
1 8 oz. can tomato sauce or paste
1 pkg. dry onion soup mix
1 cup beef  or turkey gravy
2 large potatoes
3 carrots
1 cup frozen corn
1 cup frozen green beans
2 cups water
2 bouillon cubes
Brown meat in olive oil.Mix tomato sauce or paste,onion soup mix,gravy and water.Add mixture to meat.Cover and simmer 3 hours or until meat is tender.I also cook this soup in crock pot  for6 hours on low.
Cut potatoes and carrots to chunks and add them to stew.Also add frozen corn and green beans.Serve  with garlic bread.Enjoy!

Brownie Cheesecake

1pkg.refrigerated pie crust
8 oz.cream cheese,softened
3 tablespoons sugar
3 eggs
1 teaspoon vanilla extract
1 15 oz. pkg. Brownie Mix,and
1/4 cup oil  or applesauce
1/4 cup chopped pecans
2  tablespoons water
or recipe for Brownies  from underneath

 Preheat oven to350 F.Bake crust for 15 minutes.In midium bowl combine  cream cheese, sugar, vanilla and 1 egg.Beat until smooth ,set aside.In large bowl combine  Brownie Mix,oil,1 tablespoon water,and remaining 2 eggs.Dough it is going to be thick.Spread 1/2  cup brownie mix in bottom of crust.Spoon and carefully spread cream cheese mixture over brownie layer.T op with remaining brownie mixture: spread evenly.Sprinkle with pecans.Bake at 350 F for 1 hour or until center is puffed.If necessary cover edge of crust to prevent excessive browning.Sometimes I drizzle hot fudge over top of pie. Cool  the pie completely.

Valentines Day Sandwich Cookies

3 2/3 cups sifted flour
2 1/2 teaspoon baking powder
2/3 cup butter
1 1/2 cup sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon salt
4 teaspoons milk

Mix butter and sugar,add eggs,one at the time.Measure sifted flour,add baking powder and salt.Add to  butter mixture alternately with milk.Chill dough for 2 hours.Roll 1/4 thick with floured cutter.Top cut with little heart on the middle.Bake on greased  baking sheet in hot oven 400 F for 9 minutes,or until done.

Shrimp Chowder

How about  hot soup.
1/4 cup butter or margarine
1/2 cup chopped onion
2 garlic cloves,minced
1carrot
/2 cup all purpose flour
5cups chicken broth
1 carrot chopped
2 potatoes,peeled and cubed
1 can whole kernel corn
1 lbs medium sized uncooked shrimp,shelled
1 ( 12 oz.) can evaporated milk
2 tablespoons chopped fresh parsley
1/2 cup rice long grain or wild rice

In Dutch oven saute onion and garlic in butter until crisp light brown.Stir in flour and cook 2 minutes ,stirring constantly.Gradually stir in chicken broth.Add carrot and potatoes .Bring to a boil: reduce heat.Simmer 30 minutes until slightly thickened.Add corn and let it simmer 15 minutes.Stir in milk,shrimp and cooked rice.Cook until shrimp turn pink.Add parsley.

Irish Scones

2 cups unbleached flour
21/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1/2 cup sugar
6 tablespoons butter,melted
1/2 cup buttermilk
1/2 cup raisins or chocolate chips

Mix flour, baking powder,salt and baking soda in large bowl.In another bowl lightly beat eggs and sugar,mix in melted butter and buttermilk.Add liquids to dry ingredients:mix to combine.Mix in raisins or chocolate chips or little of both.Divide dough into thirds.On the floured board pat each piece into a 1 inch thick circle.Cut each circle into quarters.transfer wedges to baking sheet.Bake in preheated oven to 400 F for 15 minutes.
Serve warm.

Banana Cupcakes

They are always good for breakfast.

1 stick butter or margarine
1/2 cup sugar
2 eggs
3 bananas,mashed
2 cup flour
1 teaspoon baking soda dissolved in 1/2 cup milk

Cream margarine and sugar.Add eggs.Add flour, milk mixture and bananas.Divide into baking cups for cupcakes. Bake at 350 F for 30 minutes.

Gingerbread Cake

11/2 stick butter or margarine
1cup sugar
5 eggs
11/2 cup flour plus 2 tablespoon and 2 tablespoons corn starch
2 teaspoons baking powder
4 tablespoons cacao
1 teaspoon of each cinnamon, ginger, cloves
1/2 teaspoon nutmeg
2 bars dark chocolate (7 oz. total, 200g )
1 full cup heavy whipping cream
1 small jar
(9 oz) plum jam

Mix butter and sugar in an electric mixer. Add the eggs, one at the time. Combine all dry ingredients and add the mixture to the first bowl. Chop up 1 bar of chocolate and pour into mixture. Pour mixture to a 9-inch spring form. Bake for 40 minutes at 350 F. Let cool. Cut the cake twice into three layers.
In small sauce pan, boil  the heavy whipping  cream and add chopped chocolate of the second bar, stirring until thick and creamy. On the first layer of cake, spread about half, or more if necessary, of the chocolate mixture after letting it cool enough to still be warm. Place the second layer of cake on top, and spread the plum jam evenly. After placing the third layer, drizzle and spread the rest of the chocolate mixture on top and all over the cake, including sides of the cake. Decorate with almonds, nuts, raisins, etc.

Brownies

2 squares unsweetened chocolate
1/2 cup butter
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1/2 cup  flour
1/2 cup walnuts or pecans

Combine butter , sugar and eggs.Melt chocolate and add to egg mixture with vanilla and flour.Add nuts.Bake in greased 8x8 inch pan at 325 F for 30 minutes.Let cool. You can frost with prepared frosting and cut out into squares. I sprinkled with powdered sugar.

Pretzel Jello

2 2/3 cups crushed pretzels
11/2 sticks butter or margarine ,melted
12 oz. cool whip
8 oz. cream cheese, softened
1 cup sugar
2 (3 oz.) packages strawberry jello
2 cups boiling water
2 small pkg.frozen strawberries

Mix pretzels and butter,press into 9 x13 pan to form crust.Bake at 400 F for 10 minutes. Cool. Add sugar to cream cheese and mix well, then fold in cool whip and spread onto crust.Dissolve jello in water and add frozen strawberries.When mixture begins to thicken, spread on cheese layer- very slow. Refrigerate to set. Serve 15 to 18.Enjoy.
