Cranberry Christmas Cake

I bake this cake around Christmas time every year. It is very easy to make, is moist and is delicious. Enjoy.


9 T butter
1 c sugar
2 eggs
4 yolks
1/2 c flour
1/2 c  corn meal
1 t baking powder
1 t vanilla extract
1/2 c orange juice
1 T orange zest
6 oz dry cranberries or cherries

Mix butter and sugar  with an electric mixer  on a low speed for a few minutes.Combine the flour ,corn meal and baking powder with dry cranberries.Add to a butter mixture 4 yolks , eggs and vanilla extract.Add the flour mixture switching with orange juice  to the batter.Pour batter to 9 inch round pan. Bake for 50 minutes 350 F. Let it cool for 1 hour.Sprinkle with powder sugar.

Easy and Delicious Coconut Pie

2 c.milk
3/4 c. sugar
1/2 c. pancake mix
1/4 c. butter
1 t. vanilla
4 eggs
1 c. coconut flakes,sweetened

Mix all ingredients except coconut flakes with electric blender  on low speed for 5 minutes.
Pour into 9 inch pie pan. Let stand about 5 minutes.Then sprinkle with coconut flakes.
Bake  at 350 F for 45 minutes.Serve warm or cool. Enjoy it

PECAN PIE


2 frozen pie shells,thawed
4 eggs
1 cup sugar
4 Tablespoons butter ,softened
1/4 teaspoon salt
1 teaspoon vanilla
1 cup dark Karo syrup
1 cup light Karo syrup
3cups pecan halves
4 Tablespoons flour

Preheat oven to 375 F.Mix eggs , sugar ,vanilla and salt.Add  butter and the rest ingredients slowly.
Pour mixture into thawed pie shells.Bake for 15 minutes. Reduce heat to 350 F and bake for another 45 minutes.Cool  for 1 hour.Serve warm with vanilla ice cream.
